Just a couple of thoughts or points about Indian foods.

Ghee is the least allergenic cooking oil/fat available
Basmati, Wild, Jasmine, corn, maize are high in Salicylates and can cause a broad range of allergic reactions.
Brown rice or long grain rice does not contain Salicylates or Amines.
Garlic does not contain Amines or Salicylates, Chillies contain Salicylates

The point being that health wise this is a mine field depending on your health status or concerns but some things like Ghee that look unhealthy are actually very good.

If one suffers from too much weight loss on an Indian diet it can mean that you are missing out on calories and need to increase the staple foods, oils increase calories.

If anyone wants some good detail give me an IM as I have some excellent info on foods and allergies.

FYI: Been in India nearly 3 months now, eating pretty much exclusivley veg Indian food and must have lost over 2 stone, (that 28 pounds) Its not as if I've been avoiding food either. Stuffing myself.

i find that south is generally a healthier option than north. idli, dosa, and banana leaf meals. Mmmmmmmmmmmmmm !!!
