friend of mine managing a five star hotel used to say, either eat at a cheap dhabha, where there are no leftovers and they have to finish the food since there is no refrigeration overnight (which is why if you are late you dont get food there), or eat in a five star hotel which has refrigeration and generator backup.

all resteraunts in between these extremes are risky.

I grew up playing in the dirt, I'm lookin forward to eatin all sorts of grub.

Thru' college I worked at McD's ... I've seen nothing described in this thread that even comes close to the horrors there ... but I still enjopy the odd Big Mac, I just try to appear humble, not offend the teenager, and never ask for extra cheese.

Eating where the locals eat, has been a rule of thumb that's worked for me. If there are lots of them eating from one place, you're generally safe.

Other rules of thumb: nothing involving liquid that could be leftover for too long with little customer turnover (such as pani puri), or mustard oil being re-used.

Hot food is fine. So are rolls. You just got to be smart. The only food that got me really sick were the in-between places, like mid-range restaurants.. and it's always fish or prawns so unfresh that I know from the first bite "this is it".

Then again I'm a Asian and eating street food is in my culture... you'll get used to it!

My big fear is hepatitis. Last Chatt man I saw in action had two filthy hands, and a filthy towel he kept wiping them on. My wife at that Chatt and didn't get sick.

so true, and some restaurants are obviously dirtier than the street food... like when you are handed a menu that is totally caked with dirt!

Well, I'm not saying all the street food is going to be safe, but I ate mostly everything I could find on the streets with few reservations. For almost two months I was fine. Just remember to take a few days to adjust to the food (eat lightly that is).
