gluten intolerance in northern india

gluten intolerance in northern india

Anybody out there traveled through Northern India with celiac or similar gluten intolerance? I hear wheat is used a lot. Rice is great for me, but here in the states I have to watch for wheat being used to thicken sauces and soups, for instance. Do you think I'll be able to get this concept across in restaurants?

Although wheat is most popular in north India but finding rice is very easy. Almost all restaurants will serve rice.
Wheat is rarely used to thicken north Indian gravies. Go for seasonal vegetables, winter is a great time for varieties of fresh vegetables.
Stay away from soups like Cream of chicken/mushroom, refined flour is often added to this.
