If you want to go south of Goa, the Sivananda organization has an ashram near Trivandrum, Kerala. www.sivananda.org. Other non-commercial ashrams can all be found in Rishikesh. There is an International Yoga Festival -I'll be there- for one week starting March 1st-7th at Parmarth Niketan Ashram in Rishikesh. www.parmarth.com. Another one in the south near Bangalore is called Vivekananda Kendra Prashanti Kuteeram. It's a yoga research ashram and hospital that also does yoga therapy and teacher training. I think it's www.vkyogas.com. As for Goa...there is a teacher named Sharat Arora (www.hiyogacentre.com) who runs classes in Dharamsala in the summer and Goa in the winter. I was there last year in Goa. He's got a tough teaching style and quite a temper which I wasn't very fond of... you can do a one-week intensive in Arambol, it's not an ashram. Once you're there you can find out what else is going on if you don't like him.
