Check out www.brahmaniyoga.com for Anjuna drop in classes and google Purple Valley Yoga for yoga retreats.Both very good.

i believe that purple valley also do drop-ins, though it's not the cheapest place in india

Yoga
Definitely check out Brahmani Yoga in Anjuna. Classes are Rs. 400/- (or at least were, in high season) and varied by experience level. It is kinda/sorta attached to Granpa's Inn, where you can indulge in brekkie after yoga. Attached are a coupla pics (heavily compressed unfortunately). Left one shows where Yoga classes take place.
