Finding Rennet, or Junket tabs 2 make cheese, in Goa
I want to make firm cheeses and need an ingredient callet Rennet.
From Wikipedia: Rennet (pronounced /ˈrɛnɪt/) is a natural complex of enzymes produced in any mammalian stomach to digest the mother's milk, and often used in the production of cheese. The active enzyme in rennet is called chymosin or rennin (EC 3.4.23.4) but there are also other important enzymes in it, e.g., pepsin or lipase. There are non-animal sources for rennet substitutes. Any ideas? I hear there is a cheese shop by the name of Mya's in Palolem, but I cannot get a phone number to ask her whereabouts she procures hers. Also, I am willing toorder/purchase from anywhere else in India, and I am particularly interested in the veg kind.My cell is 989008273. Thanks, Lisa |
