A lot of mailservers have the cleanup options turned on by default, but most of them let you change the settings in the webmail interface.

If it is IMAP, there is a program to backup and restore your emails very easily, directly on the server.
It's called IMAPSize.

I use it myself to take weekly backups of my emails

BB -Not unless it empties again at its sort-of 3 monthly intervals!
Zoeperman gave me a suggestion of where to look (I will have to write this down and then see if I can do it!) to see if there is somewhere to change a clear-out setting. So far I've found nothing really.
I'm not worried about restoring so much now because I finally have Broadband - I just re-sync with the email server and it does it automatically but with GPRS or Dial-Up it was slow and laborious.
