Goa to Varanasi??

We are trying to figure out the fastest way to get to Varanasi from Goa and not pre-book air tix as much as possible so we have travel flexibility (or have tix that can be changed?). The problem is we are coming back to Goa from Hampi to get to Varanasi.

We hate to get locked in but do not want to risk missing a day if we get stuck.

We would sacrifice some expense for time saved (flight $200 or less).

I see a bunch of combinations (ie, there is train to Mumbai and then fly to Varanasi, fly to Delhi and train to Varanasi or the best obviously would be fly direct to Varanasi from Goa (but can I get same day tix without getting killed on the price).

Would you risk waiting until there to risk getting some ticket or would you buy air ticket ahead of time (and therefore be locked into a schedule).

Anyone figured out the best ways to get to Varanasi?
